Beach/Coast Destination Ideas With a Senior

Happy Wednesday! I posted this on the Senior and Beach forums and it was suggested that I re-post here. My mother is 85 and cannot walk long distances; she's fine walking say 30 to 45 minutes at a time in a leisurely manner and does not require a scooter/cane, etc. She told me she'd like me to take her to Hawaii again (we've been a few times previously to Oahu, Maui, and Kauai). However, that's a long, multi-change flight for her (she's in Omaha and I'm in Dallas). She's also a smoker, and I suspect shorter flights with only one change would be best. I'd like to give her some alternative ideas for a beach/coast destination with good scenery at a nice-ish, relaxing 4 star hotel with hopefully a pool/spa that would likely be child-light. We'd be looking at 4 nights in the middle of June (although timing is definitely flexible). I'd really like to stay within a nightly budget of $450 for the hotel but would be willing to go up to $600 or a bit more for the right place. I understand parking/resort fees would likely be an additional cost. I apologize in advance for sounding like a participant on House Hunters.

I've started researching the following:

1. Santa Barbara - pros include diverse beautiful scenery with more to do that just the beach - I know my mom would love the botanical gardens and mission - and great dining. Unfortunately, the hotels within my budget just don't look very nice/worth the prices to me (example: Harbor View Inn). Also, flights to Santa Barbara aren't very convenient and I think the drive from LAX might be a bit too long for my mom.

2. Orange County - the Four Sisters property in Dana Point looks nice and is within budget. It doesn't have a pool, but luckily I've learned how to compromise. Laguna also looks interesting and I know my mom would love strolling through the art galleries. I’ve previously stayed at the Montage and liked it but it’s out of budget. Flights into John Wayne are convenient.

3. Santa Monica area - similar to Santa Barbara, the hotels within my budget just don't look that great. There is a lot to do within Santa Monica itself but we could easily drive to places like Huntington Library, which I know my mom would love. Flights would be convenient. I think I’ve talked myself out of this option because I don’t recall this area being relaxing, but maybe I’m overlooking something?

4. Carmel/Monterey/Half Moon Bay – I know these areas are a bit of a drive from the airports in SF or SJ, but I like the fact that we can do a lot of sightseeing by car. I also recall there being a lot of cute shops/galleries. My mom has been before but only as a day trip from SF. I’ve just started looking at properties but there appear to be a decent number of options near the beaches within my budget.

I've also starting looking at San Diego because the prices seem a bit lower than the other areas. We've both been to SD numerous times though. I decided to not really consider Florida or the Carolinas as many parts are still recovering and we don’t want to take away resources from locals.
