Where to stay????

I've read all the forums and now most likely I just have myself all confused by too much info! I need help deciding where to stay in September for 9-10 days. Here's some info on me and my husband:

We are in our mid to late 50s, active and in reasonable shape. We like to hike (no hard trails) and recreational biking but also love to relax by the pool and beach. We are big bourbon drinkers and love a good cocktail in the evening as well as some nice meals out. Also love trying local foods/specialties, etc. This will be our second island to visit in Hawaii (traveled to Oahu several years ago). We are open to a resort or condo, but must have A/C. Would love to be right on a beach or within walking distance to a nice one. Also, looking to go on Napali boat tour. We are renting a car for sightseeing so that's not an issue. Please help me decide whether north shore or south shore would suit our needs better and if you have a recommendation for a place to stay. Thank you!!!!
