I was honored to attend Maison ES's 10th anniversary celebration party last week🎉
And got to be the first to taste the soon-to-be-launched "Hong Kong Nostalgia Menu" —
Inspired by various Hong Kong ingredients and dishes, each dish brings delightful surprises.
Looking forward to the new set menu to be launched later✨ Including:

✨Egg Custard with Mushroom Duxelles, Sugar Snap Peas & Truffle Emulsion -
Egg custard as the base paired with mushroom sauce, sugar snap peas, and truffle emulsion — surprisingly well matched.

✨Charred Octopus with Chinese Sausage, Piquillo, Smoked Potato Espuma & Chives - the octopus was smoky and delicious!
Grilled octopus with Chinese sausage and smoked potato foam. The octopus legs were tender and flavorful, combined with the smoky mashed potatoes — super tasty!

✨Black Abalone with Farro, Liver Sauce Infused Soy, and Shitake Farro Cracker
My personal favorite🌟🌟🌟🌟🌟
Abalone served with farro, liver sauce soy infusion, and shiitake farro cracker — it has the crispy look and feel of claypot rice!

✨POMEO Seared Langoustine, Salmon Roe, Avocado Cream, Cucumber, Croutons & Russian Borscht Gazpacho
A commercial twist on borscht — served with seared langoustine and salmon roe.

✨Satay Chicken Skewer & Peanut Sauce
Satay chicken skewer with peanut sauce — I really loved the satay sauce, the peanut aroma was very rich!

✨Mini Tart with Roasted Pigeon Breast, Leg Confit, Foie Gras, Beetroot, Spice Salt & Sweet Plum Pigeon Jus
Mini tart with roasted pigeon breast, leg confit, foie gras, beetroot, spice salt, and sweet plum pigeon jus.
It has a very French flavor, and the pigeon meat is juicy and tender🌟

✨Kagoshima Short Rib Tartar, Oscietra, Soft Boiled Quail Egg, Satay Emulsion & Rice Vermicelli Chips
Made with Kagoshima short rib for the beef tartare, topped with caviar and a soft-boiled quail egg on rice vermicelli chips. The beef tartare was incredibly tender and paired with the quail egg for extra aroma.
It surprisingly had a satay beef rice noodle vibe🌟🌟🌟

That night, the restaurant revealed that this year Maison ES will collaborate with the cake shop Shanslate
to launch the highly anticipated afternoon tea in August. And!
