A Satisfying Meal [Golden Court, Macau]

Opened in 2007, Golden Court has been serving for 18 years. This year, it underwent an upgrade, featuring a vibrant design with colorful glass elements and free-flowing auspicious cloud-patterned carpets. The overall ambiance exudes luxury, with attention to detail being key.

Chef Xu Weihao, with 26 years of experience, specializes in classic Cantonese cuisine, showcasing exceptional culinary skills. The "Four Kings of Cantonese Dim Sum"—shrimp dumplings, barbecue pork buns, siu mai, and egg tarts—are all executed to a high standard here.

If I were to recommend three standout dishes, they would be:

1. Siu Mai: This dish features a molten quail egg at its core, demonstrating the chef's mastery of timing and ingredient selection. Only the finest quail eggs, with perfectly centered yolks, are used, resulting in a multi-layered and complex texture.

2. Stuffed Chicken with Shrimp Paste: The skin of the Sanhuang chicken is as thin as a cicada's wing, while the filling is a blend of three types of shrimp meat, topped with salted fish. The craftsmanship is remarkable and leaves a lasting impression.

3. Stir-fried Green Dragon Vegetables with Shrimp Roe Paste: Made with seasonal ingredients, this dish is bursting with fresh flavors, perfectly suited for this time of year.
