Location: I always thought the museum was near Jiuyan Bridge, but it is actually near Shuijin Bridge on Zhuobao Street. You can see it after crossing the bridge.



The price is 50 yuan for tickets, and 39 yuan for purchase on Dianping.com. However, you must make an appointment by phone in advance. I didn’t make an appointment for the first time, so I could only look around in the lobby. Once you have an appointment, you can go down to the wine cellar to visit.



Opening hours: 9 am, 7 pm is the latest entry time, and 8 pm is closed



After entering the museum and completing registration, the staff will introduce the historical background of Shuijingfang, the ancient street 600 years ago, the origin of Shuijing Street and other historical stories in the lobby.



Then I followed the staff to the ruins hall, where there are 600-year-old wine distillation sites and wine cellars. The staff said that live bacteria were first discovered in the wine cellar from the lees 600 years ago. These live bacteria are also used in the current wine vats, so drinking Shuijingfang now is like drinking 600 years of history.



Then came the wine technology hall, which is where the wine is steamed and taken. Due to technical reasons, photography is not allowed in this area. After listening carefully to the staff's explanation, the masters who were just taking the wine handed us a cup of freshly brewed wine, which had a very strong taste. The staff introduced that the raw wine needs to be mixed with wines of different years in order to truly feel the mellow aroma of the wine.

Autumn is the best season for brewing wine. The taste of the original pulp after 20 minutes of distillation is 70-80% alcohol. The distillation pools of Ming Dynasty/Qing Dynasty/modern distillation pools have witnessed the rising water levels of Chengdu. The microbial flora has been domesticated for a hundred years, and it is more stable and mature. I finally understand the fragrance and thickness of liquor. I tasted the finished products after 2 hours/10 days/1800 days, and the taste was wonderful. I drank 8 drops in total, and I felt dizzy for the whole afternoon. I will go to the museum again.

Shuijingfang Museum is still worth visiting. We made an appointment for the autumn brewing experience at 3 pm one day in advance. When we arrived, it was only a little after 2 pm. I was very lucky to win the free tour of the ancient workshop. I went to visit it on Saturday. The order in the museum was very good, and the visitors kept quiet. This museum is of great significance to the history of liquor. The museum was originally a winery that had been making liquor for hundreds of years. It changed its name several times. In modern times (I don’t remember which period it was), during the laying of natural gas pipelines (I think), a distiller’s base dating back more than 600 years was discovered, which directly pushed the history of Chinese distilled liquor back hundreds of years! In addition, many “airing halls” and “fermentation pools” used in ancient winemaking were also discovered.



All visitors also have the opportunity to taste the original sauce wine and compare the difference between the 68-degree wine stored for 10 years and the new wine. You can also learn about the various links of modern winemaking from raw materials to products, and witness the winemakers still brewing in the museum. It can be said to be a real "living heritage" because this is still a Shuijingfang factory. There are many exquisite scene restoration models in the museum, especially the first one you see when you enter the museum. It is about 10 square meters in length and in all directions. Since the workers were off work, I couldn't see the winemaking process, but there was a guide explaining, so I could understand and experience the wine culture very well. There are several exhibition halls throughout the whole process. The first two exhibition halls are open to the public, and the subsequent ones are charged separately, 50 yuan tickets. You can learn a lot about wine in the exhibition halls inside. You can also taste white wine after visiting. Friends who are interested in wine culture can go and learn about it.

I didn't expect it to be so good! It was autumn brewing when I came here. The tour guide explained the origin of Shuijingfang and the process of making liquor, and then mixed the liquor by myself. It was really worth it.

I have never drunk white wine, but be warned, it smells really good. I took a small sip and felt the legendary aroma of the wine for the first time. The taste of the white wine is very good!

It's a very nice place with a great experience. It is highly recommended in this season. When I visited it yesterday, I encountered the first day of Qiu Niang. I called in advance to make an appointment for the VIP experience of Qiu Niang!

The transportation is very convenient. Take Metro Line 2, Exit B of Dongmen Bridge, turn right, and walk down the road and you will see the Shuijingfang sign!

The experience was very good, from historical development to modern inheritance, I listened to the explanations and watched the workers at work. And because of the VIP experience, I could go directly to the production workshop and tasted the fresh original wine. That feeling was spicy from head to stomach!

Afterwards, we also participated in the wine tasting and cocktail making sessions, which also made people feel very comfortable! In the end, each person could make a bottle of wine to take away.

You need to make an appointment one day in advance. Today is the first day of autumn brewing. I wanted to see how the masters make wine, but when I arrived, it was almost seven o'clock in the evening and the masters had all gone off work.



In the lobby, I looked at the model of the entire Jiuyanqiao area, which restored the past urban life. The building and character models were quite realistic and lifelike, which was really good.



The tour guide took us to experience about five units and explained the origin of Shuijingfang very thoroughly. From the second unit when we entered the winery, the whole space was filled with the strong aroma of wine.



The lady also took us to taste the half-year new wine and the 10-year old wine, both of which were high-proof and unblended. I don't know how to drink liquor at all, but I feel that the new wine smells more fragrant and tastes very spicy, while the old wine smells strong and a little choking and spicy. The taste is very rich and the aftertaste is endless.



I have always thought that Shuijingfang's wine bottles are very beautiful. Sure enough, their designs have won many international awards. It is said that they also have many patents, which is amazing.

About winemaking: Today is the fifteenth solar term, Bailu. This is the first day of Shuijingfang autumn brewing. It turns out that Shuijingfang Brewery will stop brewing throughout the summer. Brewing a good bottle of wine is far less simple than we think. A good bottle of wine requires "time", suitable weather, to give the best fermentation temperature, and each cellar needs to "breathe", so the entire winery cannot use air conditioning. A good bottle of wine requires "geographical advantage". Shuijingfang is located next to Jinquan Street. If you look closely at the scenic spots of Dongmen, it is not difficult to find that each household originally had a well. It can be seen that the water quality here is good, which creates good conditions for winemaking. A good bottle of wine requires "harmony among people". Only an experienced winemaker can make full use of each layer of brewing bran, let every drop of wine fit in the right place, blend with the wine of the same grade, and collide with the most beautiful sparks.

Geographical location: Located between Jiuyan Bridge and Taikoo Li in Chengdu, hidden away in the city.

About the building: The second unit retains the original appearance of the winery. The lion mouth is a window on the roof for lighting and ventilation. The number and size of the opening are very sophisticated. The thousand-year-old cellar in the second unit is still in use today. The cellar mud will be preserved for the next fermentation. Therefore, the longer the cellar is, the more fragrant the wine will be. The museum evolved from the old winery and blends old and new buildings. It was designed by Liu Jiakun, a local architect in Chengdu. The style of the entire museum, the plants and the concrete treatment of the third unit are very much in his style.

Autumn Brewing Experience: Watching the winemaker steaming the wine in the factory from a close distance, it turns out that this work must be done manually. Too tight or too loose bran will affect the distillation effect, which is very particular. You can try the freshly distilled puree in the winery, which is a bit exciting. The bartender is the key to a good bottle of wine. The process of mixing the wine yourself is very interesting. Everyone can leave with their own wine as a souvenir, and everyone's wine is unique.

In general, visiting the Shuijingfang Museum is not only about understanding the development of the Shuijingfang (Quanxing) brand, but also an intuitive experience of understanding Chinese wine culture. It is definitely worth a visit.

This is truly a "living" museum, and the wine cellar is still in use today.

Here we introduce the types of Chinese liquor, which is a distilled liquor, also known as Shaojiu, and its craftsmanship dates back to the Yuan Dynasty. Shuijingfang is a strong-flavor liquor.

The raw materials for brewing wine can be taken out of the cellar and distilled into wine after 3 months of fermentation. The distilled wine is not simply mixed together, but is layered and classified by sommeliers to determine the quality of the wine. A good bottle of wine depends not only on the experience of the winemaker but also on the brewing time and the condition of the cellar. It can be said that good wine can only be produced under the right time, place and people.

The most critical part of wine quality is good water. Basically, every famous winery has a good well. It is said that Shuijingfang's wine was originally made with water from Xue Tao Well.

There is a well inside the factory site which is said to be from the Song Dynasty.

After the explanation, there is a wine tasting session (good news for liquor lovers). The museum will prepare two glasses of 68-degree original liquor for each visitor, one is a many-year-old liquor and the other is a three-month-old liquor. I don't know much about liquor, and I feel that the new liquor tastes milder, while the old liquor has a stronger taste.

At that time, this winery also brewed various kinds of wine, which makes me feel very drinkable just thinking about it.

According to the tour guide, students from the architecture department often come here to visit. This is one of the few places with old buildings in Chengdu city.

Shuijingfang's current distillery is located in Tuqiao, which borders Pi County. Every time you pass by there by car, you can smell a strong smell of distiller's grains.

Quanxing wanted to rely on the history of the ruins to create a high-end brand to enhance its influence in the industry. However, the reality went against its will. The main consumer group of high-end liquor, the government officials, had begun to shrink since a certain period, and ordinary consumers also gradually became more rational in their consumption of alcohol. Quanxing, which had no popularity in the first place, was completely ruined by this incident.

Shuijingfang's wine bottles are quite nice.

The museum ends with an introduction to other internationally renowned distilled spirits.

To be honest, the Shuijingfang ruins are so popular that few people know about them, just like the Shuijingfang brand.

The oldest wine-making workshop in the world near Jiuyan Bridge

Shuijingfang is located outside the Old East Gate Bridge in Chengdu. It is the site of an old Sichuan liquor distillery from the Yuan, Ming and Qing dynasties.

The site was discovered in 1998. In August of that year, Sichuan Quanxing Co., Ltd. discovered the remains of ancient winemaking buried underground when it was renovating its liquor production workshop. In 1999, several archaeological and research institutions excavated the site and found "wine cellars, drying halls, stove pits, distiller bases, ash pits, ash ditches, roadbeds (sprinkling water), wooden pillars and column bases, wall foundations and other remains from different eras, as well as a large number of porcelain and pottery fragments, animal bones and other relics."

There is a problem with this museum. Only 3 exhibition halls are free. The others charge 50 yuan. Actually, the purpose of this museum is to spread the culture of the city, but the fees are so high, which is contrary to the original intention.
