Hotel Recommendations and when to book for best deals?

Hello! I just found out I have an opportunity to attend a work conference next February at Mandalay Bay. I’ve been to Vegas 3x so I’m somewhat familiar with the layout. I did join MGM rewards to hopefully get a deal at one of the participating hotels. However, how far in advance are the best prices for booking? What recommendations would you have for a hotel in that area? We are a couple in our late 40s/early 50s. Not interested in the club scene but we like shows, sports bars, good food but not necessarily foodies or super picky. Would love a heated pool to sit outside by but not mandatory. I have stayed at MB before, also stayed at Planet Hollywood and Main Street Station. It’s been 15 years since I’ve been there though. Any suggestions would be welcome, thanks so much!

P.s. Budget wise, would like to be at about $200 a nite or less. We love a good deal but not a dive:) and we will not be renting a car either—-thanks!
