Recommendations for last minute trip

Hi, I have a last minute work trip scheduled for next week in Tucson. It will be my first time to the area. I’m looking for recommendations on some evening activities after the workday (after 5pm). I will not have a car and will be staying in downtown Tucson.

Is it possible to take an Uber to Saguaro NP and wander around a bit and head back? I love hiking, but realize I will not be able to do that with my limited time. However, I’d like to see a little of the park if it’s feasible.

Additionally, what are some good restaurant recommendations, especially for Mexican food? Bonus if the vibe is good for sitting at the bar and reading a book.
