formal night dress code

since its been a long time since anyone asked this question? How formal to you need to dress for formal night on a 7 night inside passage cruise?

we really dont want to take a fancy dress and jacket for hubby on uor holiday from Australia which involves a lot of outdoor activity.

how formal do we need to be. nice shirt and pants for him? nice pants and blouse for her? we are both 65.
