Dec itinerary help 8 days arriving and leaving from Phoenix

Heading to Phoenix over the Christmas break. We arrive late on the 23rd and we leave late on the 30th. The only thing I have set so far is reservations for hotel in GCNP for 12/28-30. I don’t want to drive in circles or not maximize the trip by driving inefficiently (back and forth, wasting time…)

Things we’d like to do, but not sure in what order:

Hiking (not crazy, but enough to get a nice feel)

Indian reservation / show?

We were thinking of doing a mule trip at GCNP, but it is seriously expensive (I can live with that - once in a lifetime…) but I have also read it can be very hard, and I’m not sure if December is a good time for this.

ATV tour - this is high on our list

Helicopter tour? Maaaaybe

Not sure what else there is to do, but it’s all on the menu. We are a semi-adventurous family - not skydiving or rock climbing, but definitely enjoy the hiking, sunsets, wildlife, …
