Recs requested for 5-7 day itinerary (including Tampa)

Hi! My husband and I (mid-50's) are planning a 5-7 day trip in FL at the end of Feb., starting in Orlando (by car). What would be a good, interesting road trip for that timeframe? Staying in or near a beach area would be nice but we're not into sitting on the beach all day. Looking for an interesting general itinerary with historic/cultural/nature things to see and do (museums, castles, wildlife viewing, scenic drives, boat trips, charming towns to walk around, etc.) and good food/seafood. Shopping, bars and lots of nightlife aren't really important. We have already seen St. Augustine, Cocoa and Melbourne, Jacksonville and Miami, and some of the Clearwater/St. Pete area. The Keys seem to be out of our budget (max $200-$250/night, if at all possible).

We would like to stay in different areas for 2-3 nights each or just do day trips from Tampa, if certain sights are close enough. How about a loop around the Tampa/Bradenton/

Sarasota/Naples area, or exploring the Panhandle, or someplace else? What are some "must-see" sights? How many nights/day in each place? We want to stay in decent areas but not luxury 4 or 5-star hotels. Thanks so much for your input and ideas!! We don't know where to start.
