How many nights in Guangzhou in mid March?

During my month long stay in HK, want to visit Guangzhou. Want to do that on a weekend or so. How many nights? Interested in history, old architecture, Chinese culture. Is there an old town with hotels? Would like to stay at a Chinese authentic hotel, not a hirise western brand.
