Two full 1/2 days in Lake Havasu

Stopping through Lake Havasu as a part of a leisurely road trip (3 adults). Will arrive mid afternoon and staying at the London Bridge Resort. Won't need to leave until mid day/early afternoon the next day. Thinking about doing something touristy the first day with 1 guest having mobility issues (elderly) but no assistive device needed. Thinking about a Sunset tour on charter on pontoon ($112) or the Dixie Bell cocktail cruise ($45). The next morning looking for a hike or DIY leisurely walk to get in about 3-5 miles. We would like a nice "foodie" lunch before we hit the road. Appreciate input on the tours, great restaurants or hiking trails.
