End of year public holiday impact questions

Will be in Hong Kong in late December. Wondering what I should keep in mind when planning my itinerary around the 25 December, 26 December and 1 January public holidays? Do popular tourists places/cafes/restaurants/shops close down? Also, would places like Disneyland be extra busy or quieter on a public holiday? For example in Japan, on 1 January lots of places including cafes, restaurants and tourist attractions are closed on 1 Jan and often for some days around this date - is it the same in Hong Kong for any of the public holidays I mentioned?
