Hong Kong for a week in October with kids

I'm looking into visiting Hong Kong in the first week of October. I have two kids 9 and 6 years old.
We will be spending at least 2 days at Disneyland as we are a theme park family so HK DL is a priority for us, should we stay at DL ? Or look elsewhere? With the 5 other days what should we be doing? I have no idea about Hong Kong, areas to stay etc??
