25th anniversary hotel recs

Planning a 3-4 night in the San Diego area in July for our 25th anniversary. Would love some advice on where to stay. We love to eat, explore, walk along beach, hike. New to San Diego so really have no clue what area would be best.

Looking for:

-intimate and lovely setting, don't really want a giant chain resort

-bar and restaurant onsite would be great

-a spa, but if not one at the hotel maybe one close by we could visit?

-ideally would like to not be in the middle of nowhere and within walking distance to shops/restaurants or maybe the beach or hiking spots, BUT will likely have car so can also drive

-would like to stay under $800/night

-nothing too "stuffy"

I've looked at La Valencia (no spa), Estancia La Jolla (within walking of beach and Torrey Pines but maybe not much else close?), and the Inn and Rancho Santa Fe (looks so beautiful but far away).
