Booking LLs in advance - timing

On some of my days at WDW, I plan to arrive at the park in the late afternoon, so I want to book my LLs for late afternoon or night. When I book at my 7- day window, I assume I can only book the earliest time available, and have to keep checking back throughout the day (and future days) to change the LL time to move it later. That worked pretty well for me when you could only book the day of your visit. But with the new advance booking (and a 9- night stay), I will be booking LLs as much as 2 weeks or more in advance, and hate the thought of having to do that every day during that time to keep moving my LLs later. Does anyone have experience doing this and how hard/easy it is to push advance LLs back to later times?

Or once you book an LL and go to modify it, do you get a wider choice of times?
