Istanbul’s Grand Bazaar is mesmerizing by day, but at night, the nearby spice market transforms into a feast for the senses. I followed the scent of grilled kebabs and roasted chestnuts to a small family-run restaurant. The table filled quickly — meze plates with hummus, stuffed grape leaves, and smoky eggplant. The main dish was lamb kebab, tender and fragrant. Turkish tea arrived at the end, served in glass cups that glowed in the lantern light. Around me, locals laughed, the call to prayer echoed softly, and the city felt eternal. In Istanbul, food is history — served with love and centuries of tradition.
