Orlando in February with kids

I am planning to go to Orlando in February mid. 2 adults + 2 kids ,10 and 2 year old.

Planning to see universal (2 days) and space center (1 day). Not planning Disney.

1) Any other place you recommend? Should I include beach as an itinerary?

2) should I rent a car or Uber ? Which is best for this itinerary?
