Universal - 2 vs 3 days

Hello! We will purchase 3 day park-to-park tickets, since it is almost the same price as a two day. We are going between Christmas and NYE, however, so we are still unsure if we should devote 2 or 3 days to Universal given our limited time. We are staying off-resort and hope to spend a day or two at Disneyworld.

We are planning to get express passes due to the expected high crowds, which will hopefully help. But how much would spending a third day at Universal help? Will we feel like we've "done it all" after two days?
