June trip with niece

I am bringing my niece to Boulder for a few days as a graduation trip. I have researched throughly but am struggling with one free afternoon/evening. Hoping to branch out to a nearby small town for some sightseeing and dinner (this will also be our bad weather fall back.) We will already be doing lots of hiking and taking a guided tour to RMNP. Suggestions?
